Michael Stuart NY’s Shrimp Taco

If we had to choose our favorite dish from Michael Stuart’s nine course “ode to salt” tasting menu we just wouldn’t be able to. Each dish was unique and delicious in it’s own right and it just wouldn’t be fair to the others. One that stood out in our minds was the wild patagonia red shrimp taco with mango salsa, avocado, and kilauea onyx sea salt. I highly recommend trying this at home!

To make a 8-10 tacos for your next party pick up…

1/2 pound wild patagonia red shrimp (rock shrimp would be great too), 1 mango, red onion, jalapeño, lime juice & olive oil

Make magic…

Sear the shrimp in a pan with a little olive oil, salt & pepper.

Brunoise the mango, red onion, and jalapeño (in normal terms, chop into small pieces). Add a lime juice to taste and mix all the ingredients together.

Mash avocado in a bowl with lime juice, salt and pepper. Build your own tacos and enjoy!
